myoglobin

Muscular oxygen storage

Myoglobin is an oxygen-binding protein found in muscle tissue.

It stores oxygen delivered by hemoglobin in the blood and releases it when muscles need energy during exertion.

Myoglobin gives meat its red color—the darker the meat, the more myoglobin it contains.

The high myoglobin content in beef makes it redder than chicken.
