fiddleheads

Curled fern shoots

Fiddleheads are the tightly coiled young fronds of certain ferns, harvested as a vegetable before they unfurl.

Named for their resemblance to the scroll of a violin, they have a grassy, slightly bitter flavor often compared to asparagus or green beans.

Ostrich fern fiddleheads are the variety most commonly eaten: We found fiddleheads at the farmers market and sautéed them with garlic.
