lamb's quarters

Wild spinach substitute

Lamb's quarters is a common wild plant with diamond-shaped leaves that have a whitish, powdery coating underneath.

It grows as a weed in gardens and disturbed soil throughout North America.

The leaves are edible and nutritious, often foraged for salads or cooked like spinach: The lamb's quarters in my garden are better eating than the lettuce.
