hanger steak

Diaphragm muscle meat

Hanger steak is a cut of beef from the diaphragm of the cow, prized for its rich, beefy flavor.

The name comes from the way the muscle "hangs" from the diaphragm between the rib and loin.

Each animal yields only one hanger steak, making it relatively scarce.

Also called butcher's steak—supposedly because butchers kept it for themselves: The hanger steak was perfectly charred on the outside, pink in the middle.
