glass noodle
Clear Asian noodle
Glass noodles are thin, translucent noodles made from starch—typically mung bean, potato, or sweet potato.
Common in East Asian cuisine, they become clear and slippery when cooked: The glass noodles in the soup were almost invisible.
Also called cellophane noodles or bean thread noodles.
