brûlée

Burnt sugar crust

Brûlée is French for "burned" and appears in English almost exclusively in crème brûlée—a custard dessert with a caramelized sugar top.

The sugar is torched until it forms a crisp, glassy crust: She cracked the brûlée with her spoon.

The term occasionally describes other dishes with a similarly torched surface.
