unbrowned
Not yet golden
Not browned; lacking the golden-brown color that comes from cooking.
The term appears almost exclusively in recipes, describing food that hasn't yet developed a caramelized surface: Flip the chicken when the unbrowned side faces up.
Sometimes it indicates food that should remain pale: Keep the onions unbrowned by stirring frequently.
