brûléed

Caramelized by flame

Brûléed describes food whose sugar-coated surface has been caramelized by intense heat, typically a kitchen torch.

The term comes from French meaning "burned." It appears almost exclusively in reference to crème brûlée or dishes prepared in that style: brûléed grapefruit, brûléed bananas.

The accent marks are often dropped in casual use.
