adlibbing

Speaking without script

Adlibbing is speaking or performing without preparation, improvising in the moment rather than following a script: The teleprompter broke, so she spent the last five minutes adlibbing.

Musicians adlib when they depart from written arrangements.

The term comes from the Latin phrase ad libitum, meaning "at pleasure."
