San Marzano
Prized canning tomato
San Marzano is a variety of plum tomato prized for sauce-making, named after the town near Naples where it originated.
The tomatoes are elongated with fewer seeds and thicker flesh than standard varieties.
San Marzano tomatoes appear on ingredient lists as a mark of quality, though the designation is loosely regulated outside Italy's D.O.P. certification.
