An unsubscriber is someone who removes themselves from a mailing list, newsletter, or subscription service.
The term appears most often in email marketing contexts, where unsubscribers represent lost audience: Our unsubscriber rate spiked after we increased email frequency.
The word can also describe someone who cancels a paid subscription.
