stone crabs
Florida seafood specialty
Stone crabs are crabs harvested primarily for their claws, which contain sweet, dense meat.
Found along the Atlantic coast from North Carolina to Texas, they're a Florida delicacy.
Fishermen remove one claw and return the crab to the water, where it regenerates the limb over about a year.
The claws are typically served cold with mustard sauce: We ordered stone crabs at Joe's.
