stone-ground

Coarsely milled flour

Stone-ground describes grain, especially wheat or corn, that has been milled between traditional millstones rather than modern steel rollers.

This older method produces coarser flour or meal with more texture and retains more of the grain's natural oils and nutrients.

The term appears most often on food packaging to signal artisanal or traditional production methods: stone-ground whole wheat bread, stone-ground grits.
