silverside
Lean hindquarter meat
Silverside is a cut of beef from the outer part of the rear leg, just above the leg.
The name comes from the silvery membrane on one side of the cut.
It's lean and typically roasted or slow-cooked; in Britain and Australia, it's traditional for corned beef.
Silversides are also small, slender fish with a distinctive silver stripe along each side, common in coastal waters.
