salt fish
Dried brined catch
Salt fish is fish preserved by salting and drying, a method predating refrigeration that remains central to Caribbean, Portuguese, and Scandinavian cuisines.
Cod is the most common variety, often called salt cod or bacalao.
The fish must be soaked before cooking to remove excess salt: She soaked the salt fish overnight for ackee and salt fish.
