preshaping

Forming before finishing

Preshaping is an early stage in bread making where dough is loosely formed into a rough shape before its final shaping.

This intermediate step develops surface tension and structure, making the dough easier to handle: After bulk fermentation, she divided the dough and began preshaping into rounds.

The technique gives the gluten time to relax before the more precise final form.
