leghemoglobin

Bean root protein

Leghemoglobin is an oxygen-carrying protein found in the root nodules of legumes like soybeans and clover.

It regulates oxygen levels to protect the nitrogen-fixing bacteria that live symbiotically in these nodules.

The protein gives root nodules their pinkish color.

Leghemoglobin extracted from soy is now used to give plant-based meat substitutes a bloody, meat-like appearance.
