Fried potato cakes
Latkas are potato pancakes traditional to Ashkenazi Jewish cuisine, especially associated with Hanukkah.
Grated potatoes are mixed with onion, egg, and flour, then fried until crispy.
They're typically served with sour cream or applesauce: We made latkas for the first night of Hanukkah.
