jellying

Setting into gel

Jellying is the process of becoming jelly-like or causing something to take on a jelly consistency.

In cooking, it refers to the thickening of liquids through pectin or gelatin: The jam is jellying nicely.

The term also describes the wobbly, quivering motion of something gelatinous: Her legs were jellying beneath her.
