isomalt

Low-calorie sugar alcohol

Isomalt is a sugar substitute derived from beet sugar, used in candy making and sugar-free foods.

It has about half the sweetness of table sugar and doesn't caramelize as readily, making it popular for pulled sugar sculptures and hard candies that need to stay clear: The pastry chef works with isomalt because it holds its shape better than sugar.
