Green papaya is unripe papaya, firm and pale-fleshed rather than the soft orange fruit eaten when mature.
It's used as a vegetable in Southeast Asian cooking, most notably shredded raw in Thai papaya salad (som tam): She pounded the green papaya with chilies and lime.
The firm texture holds up to vigorous preparation and absorbs dressings well.
