country ribs
Meaty blade steaks
Country ribs are a cut of pork from the shoulder end of the loin, meatier and less fatty than traditional spare ribs.
Despite the name, they contain little or no rib bone—they're cut from the blade end where loin meets shoulder.
Country ribs are often braised, grilled, or slow-cooked: I'm smoking some country ribs for the cookout.
