chiffonade

Herb cutting technique

Chiffonade is a knife technique for cutting leafy vegetables or herbs into thin ribbons.

The leaves are stacked, rolled tightly, then sliced crosswise into fine strips.

The result is also called a chiffonade: Garnish with a chiffonade of basil.

The word comes from French for "made of rags."
