rough chop

Imprecise knife work

A rough chop is a knife cut that produces irregular, coarse pieces—faster and less precise than a fine dice or mince.

The technique is used when uniformity doesn't matter, as in vegetables destined for a stock or sauce that will be strained: Give the onions a rough chop and throw them in the pot.

As a verb phrase, to rough chop means to cut this way.
