Buttery filled poultry
Chicken Kyiv is a dish of boneless chicken breast pounded thin, wrapped around a core of garlic butter, then breaded and fried or baked.
When cut, the melted butter flows out.
The dish became popular in Western restaurants in the mid-20th century.
The spelling Kyiv (Ukrainian) has largely replaced Kiev (Russian) since Ukraine's independence, especially after Russia's 2022 invasion.
