carotenes

Carrot color compounds

Carotenes are orange-red pigments found in carrots, sweet potatoes, and other plants.

They belong to a class of compounds called carotenoids.

The body converts some carotenes, particularly beta-carotene, into vitamin A.

Carotenes also function as antioxidants and give autumn leaves, egg yolks, and flamingo feathers their color.
