beef chow fun
Stir-fried rice noodles
Beef chow fun is a Cantonese dish of wide, flat rice noodles stir-fried with sliced beef, bean sprouts, and scallions in soy sauce.
The noodles should be slightly charred from high heat—a quality called *wok hei* or "breath of the wok." It's a staple of Chinese-American restaurants and dim sum menus: I always order the beef chow fun.
