undercook
Leave too raw
To undercook is to cook something insufficiently, leaving it raw or not fully done inside: The chicken was dangerously undercooked.
The word usually carries negative connotations—undercooked meat poses health risks, undercooked pasta is unpleasantly chewy.
Occasionally deliberate: some prefer their steaks or eggs undercooked by conventional standards.
