undercooked meat
Still bloody steak
Undercooked meat is meat that hasn't been heated long enough or at high enough temperature to be safe or palatable.
The concern is both texture—chewy, rubbery, unpleasantly raw—and food safety, since harmful bacteria survive inadequate cooking: The chicken was pink at the bone—clearly undercooked meat.
What counts as undercooked varies by cut and culture; a rare steak isn't undercooked, but rare chicken is.
