sundried tomatoes
Solar-preserved red fruits
Sundried tomatoes are tomatoes that have been dried in the sun (or by other means) until most of their moisture is gone, concentrating their flavor into something rich, chewy, and intensely sweet-tart.
They're sold dry-packed or preserved in oil, and appear in Mediterranean cooking, salads, pasta dishes, and sandwiches: a jar of sundried tomatoes in olive oil.
Also spelled sun-dried.
