smoking chips
Grilling aroma pieces
Smoking chips are small pieces of wood used to generate smoke when grilling or barbecuing, imparting flavor to meat, fish, or vegetables.
Different woods produce different flavors: hickory and mesquite for bold smokiness, apple and cherry for milder, sweeter notes.
The chips are typically soaked in water before use to make them smolder rather than burn.
I tossed some hickory smoking chips on the coals.
