tonkotsu ramen
Cloudy bone soup
Tonkotsu ramen is a Japanese noodle soup made with a rich, creamy broth from pork bones simmered for many hours until the collagen renders into a milky white liquid.
The name means "pork bone" in Japanese.
Typical toppings include chashu pork, soft-boiled egg, green onions, and pickled ginger.
The style originated in Fukuoka and has become one of the most popular ramen varieties worldwide: I could go for a bowl of tonkotsu ramen.
