salt cod

Dried, cured fish

Salt cod is cod that has been preserved by salting and drying, a method that predates refrigeration by centuries.

Before use, it must be soaked in water for a day or more to rehydrate and remove excess salt.

Salt cod remains central to cuisines from Portugal to the Caribbean: bacalhau, brandade, ackee and saltfish.
