palm-wine

Fermented sap drink

Palm-wine is an alcoholic beverage made from the fermented sap of various palm trees, especially in Africa and South Asia.

The sap is collected by tapping the tree and begins fermenting naturally within hours.

Fresh palm-wine is mildly sweet and low in alcohol; left longer, it becomes stronger and more sour: We drank palm-wine under the coconut trees.
