new wine

Recently fermented grape

New wine is wine that has only recently fermented, still young and unaged.

The term appears most famously in the biblical saying about not putting new wine in old wineskins—the fermenting wine would burst brittle containers.

By extension, new wine represents fresh ideas or innovations that don't fit old structures: You can't pour new wine into old bottles.
