Layered eggplant dishes
Moussakas is the plural of moussaka, a baked dish from Greece and the eastern Mediterranean.
The classic version layers eggplant, spiced ground lamb or beef, and béchamel sauce, then bakes until golden.
Regional variations substitute potatoes or zucchini for eggplant.
