kosher salt
Chef's preferred crystals
Kosher salt is coarse-grained salt used in cooking.
The name comes from its use in koshering meat—the large crystals draw out blood effectively.
Chefs prefer it because the flakes are easy to pinch and distribute evenly.
It's less dense than table salt, so recipes may specify which type: Add one teaspoon kosher salt.
