ice-houses

Cold preservation buildings

Ice-houses are structures built to store ice year-round, typically insulated buildings where ice cut from frozen lakes and rivers was packed in sawdust to preserve it through warmer months.

Before mechanical refrigeration, ice-houses were essential for food preservation on estates, farms, and in towns: The servants fetched blocks from the ice-house for the evening's dinner.
