hard candy

Boiled sugar confection

Hard candy is sugar-based confectionery that has been boiled to a high temperature and allowed to cool into a solid, glassy state.

Unlike soft candies or chocolates, hard candy dissolves slowly in the mouth rather than being chewed: lemon drops, butterscotch discs, candy canes.

The term distinguishes these from chewy or chocolate varieties.
