flat iron steak
Thin beef slice
A flat iron steak is a cut of beef from the shoulder blade, prized for its tenderness and rich flavor.
The name comes from its shape—roughly rectangular and flat like an old-fashioned pressing iron.
It became popular in American restaurants and butcher shops in the early 2000s after meat scientists identified ways to remove the tough connective tissue that runs through the shoulder: I'll take two flat iron steaks for the grill.
