first press
Original print run
First press describes oil, juice, or wine extracted from the initial pressing of raw material—olives, grapes, citrus—before subsequent pressings yield inferior product.
Extra virgin olive oil comes from the first press.
The term implies higher quality and purer flavor, since later pressings require more pressure or chemical extraction and produce harsher results.
