dry-salted
Salt-preserved without brine
Dry-salted describes food preserved by rubbing with dry salt rather than soaking in brine.
The method draws moisture out of meat or fish, inhibiting bacterial growth: dry-salted cod, dry-salted bacon.
The technique predates refrigeration and remains common for certain cured products.
