clipfish
Salt-preserved ocean catch
Clipfish is cod or other whitefish that has been salted and dried, a traditional preservation method from Scandinavia.
The fish is split, salted heavily, then air-dried on wooden racks or cliffs.
Clipfish differs from stockfish, which is dried without salt.
It remains important in Norwegian cuisine and export: Clipfish with potatoes is a classic Norwegian dish.
