curry leaf

Fragrant cooking green

Curry leaves are the aromatic leaves of a tree native to South Asia, used fresh in Indian and Southeast Asian cooking.

Despite the name, they're unrelated to curry powder—the flavor is distinctly citrusy and slightly bitter.

The leaves are typically fried in oil at the start of cooking to release their fragrance: Temper the mustard seeds and curry leaves in hot ghee.
