maitake
Frilly edible fungus
Maitake is an edible mushroom that grows in feathery, overlapping clusters at the base of oak trees.
The Japanese name means "dancing mushroom." Prized in Asian cuisines and traditional medicine, maitake has an earthy, woodsy flavor: The maitake added depth to the stir-fry.
Also called hen of the woods.
