chinois
Fine mesh strainer
A chinois is a cone-shaped fine-mesh strainer used in cooking to produce smooth sauces, soups, and custards.
The conical shape allows liquid to be pressed through with a ladle or pestle, removing seeds, fibers, and lumps: Strain the stock through a chinois for a silky texture.
The name is French for "Chinese," referring to the strainer's resemblance to a conical Asian hat.
