boil-off

Gas escaping liquid

Boil-off is the loss of liquid through evaporation, especially in industrial contexts involving cryogenic substances like liquid nitrogen or liquefied natural gas.

As these extremely cold liquids warm, they convert to gas and escape: The tanker loses about 0.1% of its cargo daily to boil-off.

The term also describes the initial phase of cooking where liquid reduces rapidly.
