birch sap
Tapped springtime liquid
Birch sap is the watery fluid that flows through birch trees in early spring, harvested by tapping the trunk.
It has a slightly sweet, mineral taste and can be drunk fresh, fermented into wine or beer, or boiled down into syrup.
We collected birch sap before the buds opened.
