asafetida

Pungent dried resin

Asafetida is a pungent spice made from the dried resin of a plant native to Central Asia.

The smell is sulfurous and unpleasant when raw—hence its nickname "devil's dung"—but mellows to an onion-garlic flavor when cooked.

It appears frequently in Indian cuisine, where it seasons lentils and vegetable dishes.

Also spelled asafoetida.
