Szechuan pepper

Tongue-tingling Chinese seasoning

Szechuan pepper is a spice made from the dried husks of prickly ash berries, used in Chinese cuisine.

Despite the name, it's not related to black pepper or chili peppers.

The distinctive quality is a tingling, numbing sensation on the tongue rather than heat: The mapo tofu had that characteristic Szechuan pepper buzz.

Also spelled Sichuan pepper.
